Food is fuel for the mind and body! Staying nourished is key to your recovery, especially when managing concussion symptoms. That’s why we here at Keep Your Head Up have put together some easy but delicious snacks, fun to make and ready in less than fifteen minutes. Some of them can even be made in advance and stored for later, pretzel bark is good anytime!
Peanut Butter Chocolate Pretzel Bark
Ingredients
1 cup bittersweet chocolate
¾ cup peanut butter chips (or just use peanut butter)
1 teaspoon butter
½ cup chopped peanut butter cups
½ cup chopped pretzels
Instructions
Line a cookie sheet with tinfoil, making sure to go up the edges so no chocolate escapes.
Bring a medium pot of water to a simmer. Once simmering, turn off the heat.
Put the chocolate in a heatproof bowl and place it over the water (make sure no steam or water gets in the bowl). Let it sit over the hot water, uncovered, until about 2/3 melted. Gently stir it and allow it to melt further until completely smooth. Do not rush this process. If the water gets too cold, you can turn on the heat for a little help, but don't overdo it.
Once fully melted, pour onto baking sheet lined and spread into an even layer.
Immediately in another heatproof bowl, add the peanut butter chips and place it over the hot water (if it's not hot enough, repeat Step 1). Let it sit until softened. Gently stir until completely smooth. If the mixture is too thick, add the butter/shortening to help smooth it out.
Spoon the melted peanut butter chips on top of the chocolate, leaving space between each spoonful. Run a knife through to form decorative swirls. Sprinkle evenly with peanut butter cups and pretzels. Let sit at room temperature for 1 hour or until set. Cut into desired pieces.
Magic Apple Pie
Ingredients
1 granny smith apple, cut into pieces
1 teaspoon pumpkin pie spice
¼ teaspoon vanilla extract
Instructions
Combine ingredients together in a microwave safe bowl, making sure the spices cover all the apple pieces
Microwave for 1 minute and thirty seconds, or until the apples are soft and the spices are gooey.
Serve over oatmeal, ice cream, or just eat it with a spoon
At Home Fro-Zone
Ingredients
1 cup frozen fruits (Your favourite flavour) half thawed
Three tablespoons yogurt
Splash of milk or juice
Instructions
Thaw fruit blend until the edges are soft but the insides are still frozen.
Combine ingredients in a blender and pulse until combined. The mixture should be able to hold peaks, like soft serve ice cream.

Banana Boats
Ingredients
1 banana
2 teaspoons peanut butter
1 tablespoon shredded long-thred coconut
Instructions
Peel banana and cut it in half lengthwise.
Spread peanut butter evenly on the banana slices.
Sprinkle generously with shredded coconut.
Enjoy!
